Simon is originally from Hong Kong and has been living in the US since 2004. He graduated from California State University, Long Beach with a Master's degree in Nutritional Science and became a registered dietitian in 2007. He is currently residing in Los Angeles and working as a clinical dietitian at Alhambra Hospital Medical Center where 70% of the in-patient population is Chinese. Also, Simon is working for various Adult Day Healthcare Centers as their nutritional consultant.
In 2009, Simon became a Certified Personal Trainer through the American College of Sports Medicine. When not working, he likes to workout in the gym and watch movies with friends. He is also a nutritional consultant volunteer for Sunshine Action Ltd., a humanitarian organization based in Hong Kong with a main charitable mission of "Poverty Relief & Emotional Healing."
